The Ultimate Ground Chuck Burger

Serves 4

You'll need:

  • 1½ lbs Homestead Ground Chuck
  • Kosher or sea salt
  • Freshly cracked black pepper
  • 4 slices aged cheddar
  • 4 good-quality burger buns
  • Lettuce
  • Sliced tomato
  • Thinly sliced red onion
  • Dill pickles

Easy Burger Sauce

  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tbsp finely chopped dill pickle
  • 1 tsp pickle juice

Mix the sauce ingredients together and refrigerate while you make the burgers.

Divide the ground chuck into 4 equal portions and gently form into patties slightly wider than your buns. Don't overwork or tightly pack the meat.

Season the outside generously with salt and pepper just before cooking.

Heat your BBQ, cast-iron skillet or griddle until nice and hot. Cook the burgers until beautifully browned, flipping once. Add cheddar near the end and allow it to melt. For food safety, Health Canada recommends cooking ground beef to 71°C/160°F.

Toast the buns, spread generously with burger sauce and pile on your burger and favourite toppings.

Homestead Tip:
Don't mix a bunch of ingredients into really good ground chuck. A light hand, salt, pepper and a good sear are all it needs.
