Sweet + Savoury Grilled Maui Ribs

This is the kind of recipe that makes Maui Ribs shine: a sticky, garlicky marinade, a screaming-hot grill and just a few minutes of cooking.

Ingredients

  • 2 lbs Maui-style beef short ribs
  • ½ cup soy sauce
  • ¼ cup honey
  • 2 tbsp brown sugar
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp rice vinegar
  • 1 tbsp lime juice
  • ½ tsp freshly cracked pepper
  • 2 scallions, thinly sliced
  • Sesame seeds, for serving

Instructions

  1. Whisk together soy sauce, honey, brown sugar, sesame oil, garlic, ginger, rice vinegar, lime juice and pepper.
  2. Place the ribs in a shallow dish or resealable bag and pour the marinade over top. Refrigerate for at least 2 hours, but preferably 4–8 hours.
  3. Remove the ribs from the marinade and let the excess drip off.
  4. Heat the BBQ or a cast-iron grill pan to high heat.
  5. Grill for approximately 2–3 minutes per side, until nicely caramelized and cooked to your liking. Because they're thin, they cook quickly.
  6. Rest for a few minutes, then finish with sliced scallions and sesame seeds.

Serve with: steamed rice, grilled vegetables and a crunchy cucumber salad.
