Sweet + Savoury Grilled Maui Ribs
This is the kind of recipe that makes Maui Ribs shine: a sticky, garlicky marinade, a screaming-hot grill and just a few minutes of cooking.
Ingredients
- 2 lbs Maui-style beef short ribs
- ½ cup soy sauce
- ¼ cup honey
- 2 tbsp brown sugar
- 2 tbsp sesame oil
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp rice vinegar
- 1 tbsp lime juice
- ½ tsp freshly cracked pepper
- 2 scallions, thinly sliced
- Sesame seeds, for serving
Instructions
- Whisk together soy sauce, honey, brown sugar, sesame oil, garlic, ginger, rice vinegar, lime juice and pepper.
- Place the ribs in a shallow dish or resealable bag and pour the marinade over top. Refrigerate for at least 2 hours, but preferably 4–8 hours.
- Remove the ribs from the marinade and let the excess drip off.
- Heat the BBQ or a cast-iron grill pan to high heat.
- Grill for approximately 2–3 minutes per side, until nicely caramelized and cooked to your liking. Because they're thin, they cook quickly.
- Rest for a few minutes, then finish with sliced scallions and sesame seeds.
Serve with: steamed rice, grilled vegetables and a crunchy cucumber salad.
