Slow Braised Beef Short Ribs
Ingredients
- 2–3 lbs beef short ribs
- Salt & pepper
- 2 tbsp tallow or oil
- 1 onion, chopped
- 3 cloves garlic
- 2 cups beef broth
- Optional: splash of red wine or balsamic vinegar
- Fresh herbs (thyme or rosemary)
Directions

Season & sear
Pat ribs dry, season well, and sear in a hot pan until browned on all sides. -
Build flavour
Remove ribs. In the same pan, cook onion and garlic until softened. -
Deglaze
Add broth (and wine if using), scraping up all the good bits. -
Slow cook
Return ribs to the pot, add herbs, cover, and cook:- Oven: 300°F for 2.5–3 hours
- OR slow cooker: low for 6–8 hours

Finish
Ribs should be fall-apart tender. Spoon sauce over top when serving.
