Slow Braised Beef Short Ribs

Ingredients

  • 2–3 lbs beef short ribs
  • Salt & pepper
  • 2 tbsp tallow or oil
  • 1 onion, chopped
  • 3 cloves garlic
  • 2 cups beef broth
  • Optional: splash of red wine or balsamic vinegar
  • Fresh herbs (thyme or rosemary)

Directions

  1. Season & sear
    Pat ribs dry, season well, and sear in a hot pan until browned on all sides.
  2. Build flavour
    Remove ribs. In the same pan, cook onion and garlic until softened.
  3. Deglaze
    Add broth (and wine if using), scraping up all the good bits.
  4. Slow cook
    Return ribs to the pot, add herbs, cover, and cook:
    • Oven: 300°F for 2.5–3 hours
    • OR slow cooker: low for 6–8 hours
  5. Finish
    Ribs should be fall-apart tender. Spoon sauce over top when serving.
