Radish Butter on Sourdough

This feels fancy. It isn't. Five minutes, fresh radishes and really good bread are pretty much all you need. Inspired by the classic French pairing of radishes and butter, it's fresh, peppery, creamy and ridiculously good!

Ingredients

  • ½ cup salted butter, softened
  • 4–5 radishes, very finely chopped or grated
  • 1 tbsp finely chopped chives or scallions
  • Pinch of flaky salt
  • Freshly cracked pepper
  • Sourdough bread, sliced

Instructions

  1. Pat the chopped or grated radishes with a paper towel to remove excess moisture.
  2. Mix the softened butter with the radishes and chives.
  3. Toast or grill thick slices of sourdough.
  4. Spread generously with radish butter.
  5. Finish with flaky salt, cracked pepper and a few paper-thin radish slices on top.

Optional: Add a drizzle of honey for a sweet-and-peppery finish.
