Quick-Pickled Radishes

Crisp, tangy and just a little sweet, these are one of the easiest ways to use up a bunch of fresh radishes. Tuck them into tacos and sandwiches, pile them onto burgers or add them to salads and snack boards.

Ingredients

  • 1 bunch radishes, thinly sliced
  • ½ cup apple cider vinegar
  • ½ cup water
  • 1 tbsp honey
  • 1 tsp salt
  • ½ tsp whole peppercorns
  • 1 garlic clove, thinly sliced, optional

Instructions

  1. Pack the sliced radishes into a clean jar.
  2. Add vinegar, water, honey and salt to a small saucepan and warm just until the honey and salt dissolve.
  3. Add peppercorns and garlic to the jar, then pour the warm brine over the radishes.
  4. Cool, cover and refrigerate. They're delicious after about 30 minutes, but even better after a few hours.
  5. Store refrigerated for up to 1–2 weeks.
