Quick-Pickled Radishes
Crisp, tangy and just a little sweet, these are one of the easiest ways to use up a bunch of fresh radishes. Tuck them into tacos and sandwiches, pile them onto burgers or add them to salads and snack boards.
Ingredients
- 1 bunch radishes, thinly sliced
- ½ cup apple cider vinegar
- ½ cup water
- 1 tbsp honey
- 1 tsp salt
- ½ tsp whole peppercorns
- 1 garlic clove, thinly sliced, optional
Instructions
- Pack the sliced radishes into a clean jar.
- Add vinegar, water, honey and salt to a small saucepan and warm just until the honey and salt dissolve.
- Add peppercorns and garlic to the jar, then pour the warm brine over the radishes.
- Cool, cover and refrigerate. They're delicious after about 30 minutes, but even better after a few hours.
- Store refrigerated for up to 1–2 weeks.
