Honey-Butter Roasted Radishes

If you've only ever eaten radishes raw, this one might surprise you. Roasting takes away much of their peppery bite and turns them tender, mellow and slightly sweet. Think roasted potatoes, but lighter and a little more interesting!

Ingredients

  • 2 bunches radishes, trimmed and halved
  • 1 tbsp olive oil
  • 1 tbsp butter, melted
  • 1 tbsp honey
  • 1 garlic clove, minced
  • Salt + freshly cracked pepper
  • Fresh parsley or chives, optional

Instructions

  1. Preheat oven to 425°F / 220°C.
  2. Toss the radishes with olive oil, melted butter, honey, garlic, salt and pepper.
  3. Spread cut-side down on a baking sheet.
  4. Roast for 20–25 minutes, turning once, until tender and lightly caramelized.
  5. Finish with fresh herbs and a little extra salt if needed.

Serve alongside steak, roast beef, chicken or just eat them straight from the pan.
