Homestead Harvest Salad with Maple Dijon Dressing
Serves 4–6 | Prep time: 15 minutes
Fresh, crisp and full of fall flavour! This colourful harvest salad is a welcome addition to your Thanksgiving table and just as delicious the next day topped with leftover turkey.
Ingredients
For the salad

1 large head of Homestead hydroponically grown lettuce, washed and torn

1 large crisp apple, thinly sliced

⅓ cup dried cranberries

½ cup toasted pecans or walnuts

⅓ cup crumbled feta or goat cheese
-
¼ small red onion, thinly sliced
For the Maple Dijon Dressing

3 tbsp extra virgin olive oil
-
1½ tbsp apple cider vinegar
-
1 tbsp pure maple syrup

1 tsp Dijon mustard
-
Salt and freshly ground pepper to taste
Instructions

Whisk together the dressing ingredients until well combined.

Arrange the fresh lettuce in a large serving bowl.

Top with apple slices, cranberries, toasted nuts, cheese and red onion.

Drizzle with the maple Dijon dressing just before serving and gently toss.
The day after Thanksgiving: Add sliced leftover turkey for a delicious, satisfying lunch. Keep the dressing separate until ready to eat so the lettuce stays crisp.
