Homestead Foods Zucchini Loaf
Ingredients
- ½ cup freeze-dried shredded zucchini
- ½ cup water (to rehydrate)
- 2 eggs
- ½ cup oil or melted butter
- 1 cup sugar
- 1 tsp vanilla
- 1½ cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp salt
Directions
- Rehydrate zucchini with water and let sit 5–10 minutes.
- Mix eggs, oil, sugar, and vanilla.
- Stir in zucchini.
- Add dry ingredients and mix gently.
- Pour into greased loaf pan.
- Bake at 350°F for 45–55 minutes.
