Homestead Foods Zucchini Loaf

Ingredients

  • ½ cup freeze-dried shredded zucchini
  • ½ cup water (to rehydrate)
  • 2 eggs
  • ½ cup oil or melted butter
  • 1 cup sugar
  • 1 tsp vanilla
  • 1½ cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt

Directions

  1. Rehydrate zucchini with water and let sit 5–10 minutes.
  2. Mix eggs, oil, sugar, and vanilla.
  3. Stir in zucchini.
  4. Add dry ingredients and mix gently.
  5. Pour into greased loaf pan.
  6. Bake at 350°F for 45–55 minutes.
