Ingredients

  • 1 New York strip steak (1–1½ inches thick)
  • Salt (coarse if you have it)
  • Fresh ground pepper
  • 1 tbsp butter or tallow
  • 2 cloves garlic (optional)
  • Fresh herbs like thyme or rosemary (optional)

Directions

  2. Season well
Generously salt and pepper both sides.
  3. Heat your pan
Cast iron works best—heat until very hot.

Place steak in pan and don’t touch it for 3–4 minutes.
Flip and cook another 3–4 minutes.
  5. Baste (optional but worth it)
