Ingredients
- 1 New York strip steak (1–1½ inches thick)
- Salt (coarse if you have it)
- Fresh ground pepper
- 1 tbsp butter or tallow
- 2 cloves garlic (optional)
- Fresh herbs like thyme or rosemary (optional)
Directions

Bring to room temp
Take the steak out 30–45 minutes before cooking. -
Season well
Generously salt and pepper both sides. -
Heat your pan
Cast iron works best—heat until very hot. -
Sear
Place steak in pan and don’t touch it for 3–4 minutes.
Flip and cook another 3–4 minutes. -
Baste (optional but worth it)
Add butter, garlic, and herbs.
Tilt the pan and spoon the melted butter over the steak for 1–2 minutes. -
Rest
Remove and let rest 5–10 minutes before slicing.
Doneness Guide
- Rare: 120–125°F
- Medium Rare: 130–135°F
- Medium: 140–145°F
