Crispy Parmesan Radish Bites
Think crispy smashed potatoes, but made with radishes. Roasting mellows their peppery bite, while Parmesan gives them a salty, crispy crust. Great as a snack, side dish or appetizer with a creamy dip.
Ingredients
- 2 bunches radishes, trimmed
- 1 tbsp olive oil
- ½ cup finely grated Parmesan
- 1 garlic clove, minced
- ½ tsp dried Italian herbs
- Salt + freshly cracked pepper
- Fresh parsley or chives, for finishing
Instructions
- Preheat oven to 425°F / 220°C.
- Simmer whole radishes in salted water for about 8–10 minutes, until just fork-tender. Drain and pat very dry.
- Place the radishes on a parchment-lined baking sheet and gently smash each one with the bottom of a glass.
- Brush with olive oil and sprinkle with garlic, Parmesan, herbs, salt and pepper.
- Roast for 20–25 minutes, until the edges are golden and crispy.
- Finish with fresh herbs and a little extra Parmesan.
Serve them hot with garlic aioli, ranch or a sour cream + herb dip.
