Creamy Radish + Potato Gratin

When baked, radishes lose much of their peppery bite and become tender and mellow. Layer them with potatoes, garlic, cream and Parmesan make for a cozy side dish.

Ingredients

  • 1 bunch radishes, thinly sliced
  • 3 medium Yukon Gold potatoes, thinly sliced
  • 1½ cups heavy cream
  • 2 garlic cloves, minced
  • ½ cup grated Parmesan
  • ½ cup shredded aged cheddar
  • 1 tsp fresh thyme leaves
  • Salt + freshly cracked pepper
  • Butter for the baking dish

Instructions

  1. Preheat oven to 375°F / 190°C and butter a small baking dish.
  2. Warm the cream with garlic and thyme over low heat for 3–4 minutes. Don't let it boil.
  3. Layer the sliced potatoes and radishes in the baking dish, seasoning lightly with salt and pepper as you go.
  4. Pour the warm garlic cream evenly over everything.
  5. Sprinkle with Parmesan and cheddar.
  6. Cover and bake for 35 minutes.
  7. Uncover and bake another 20–25 minutes, until bubbling, golden and the potatoes are fork-tender.
  8. Let rest for 10 minutes before serving.
