Creamy Radish + Potato Gratin
When baked, radishes lose much of their peppery bite and become tender and mellow. Layer them with potatoes, garlic, cream and Parmesan make for a cozy side dish.
Ingredients
- 1 bunch radishes, thinly sliced
- 3 medium Yukon Gold potatoes, thinly sliced
- 1½ cups heavy cream
- 2 garlic cloves, minced
- ½ cup grated Parmesan
- ½ cup shredded aged cheddar
- 1 tsp fresh thyme leaves
- Salt + freshly cracked pepper
- Butter for the baking dish
Instructions
- Preheat oven to 375°F / 190°C and butter a small baking dish.
- Warm the cream with garlic and thyme over low heat for 3–4 minutes. Don't let it boil.
- Layer the sliced potatoes and radishes in the baking dish, seasoning lightly with salt and pepper as you go.
- Pour the warm garlic cream evenly over everything.
- Sprinkle with Parmesan and cheddar.
- Cover and bake for 35 minutes.
- Uncover and bake another 20–25 minutes, until bubbling, golden and the potatoes are fork-tender.
- Let rest for 10 minutes before serving.
