Creamy Potato, Kale & Italian Sausage Soup

Serves 6

Ingredients

  • 1 lb Italian Meat Masters sausage
  • 1 tbsp olive oil or butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 5–6 medium potatoes, cut into bite-sized pieces
  • 6 cups chicken broth
  • 3 cups chopped Homestead kale, stems removed
  • 1 cup heavy cream (Blackwell 35%)
  • ½ tsp dried thyme
  • Salt and freshly cracked pepper, to taste
  • Optional: pinch of red pepper flakes
  • Grated fresh parmesan for serving

And definitely serve it with a big piece of crusty bread for dipping.

Directions

  1. Heat a large soup pot over medium heat. Add the sausage and cook, breaking it into bite-sized pieces, until browned. Remove excess fat if necessary.

  2. Add the onion and cook for 3-4 minutes until softened. Stir in the garlic and thyme and cook for another 30 seconds.

  3. Add the potatoes and chicken broth. Bring to a gentle boil, then reduce the heat and simmer for 15-20 minutes, until the potatoes are fork tender.

  4. For a slightly thicker, creamier soup, use the back of a spoon to mash a few of the potatoes right in the pot.

  5. Stir in the kale and simmer for another 3-5 minutes until tender.

  6. Reduce the heat to low and stir in the cream. Warm gently without bringing the soup back to a hard boil. Season with salt, pepper and red pepper flakes if desired.

  7. Ladle into bowls and finish with freshly grated Parmesan and plenty of cracked pepper.

Homestead Tip: This is a great recipe to change up depending on which Italian Meat Masters sausage you bring home. Spicy Italian makes it classic, while bacon + garlic, bison or another variety can completely change the flavour.
